1 lb carrots, peeled and shredded
2 large Granny Smith Apples
2 Tablespoons lemon juice
one-half Tablespoon vanilla extract
8 ounces vanilla yogurt
Combine carrots and apples and set aside. Mix together lemon juice, vanilla, and yogurt, and pour over apple and carrot mixture. Stir well to combine. Chill.
